 Pumpkin Coconut Lentil Soup

1 Tbs oil

small bunch spring onions

2 cloves garlic

2” fresh ginger

1-2 chilis

2 stacks lemongrass

1 c red lintil

1#2oz pumpkin or squash

4-5 c vegetable stock

14oz coconut milk

Fry the onions, garlic, ginger, chilis and lemongrass in oil.
